POTATO ROSEMARY

The herbaceous smell of this bread will fill your whole house when it’s baking. Start by picking an interesting heirloom variety of potato at the farmers’ market. I’ve used Kennebec, German Butterball, and Purple Viking. Yukon gold works, too. Because I use skin-on diced potatoes, you will see little golden or purple cubes throughout the bread when you cut into the baked loaf. You don’t have to roast the potatoes until they are completely tender because they will cook more as the bread bakes.
